Gooey Grilled Cheez Sandwiches

Home late. Vegan Mom had a 6:00 meeting. Kids running around yelling. Tired. I went to the pantry and picked out some tomato soup and baked beans, and then made these sandwiches from The Ultimate Uncheese Cookbook with some home made whole wheat bread. I added some frozen mixed veggies and dinner was ready in 20 mins. It was fast, nutritious, and the kids ate it. Mission accomplished.

I don't know where I've been but I just discovered your blog and have to say I love it! I've got two fairly picky kids and you've given me some great ideas for pleasing them while still enjoying the food myself. Thanks for the inspiration.

I don't have kids but I know these nights when you come home and you are all worn out and cranky and the worst is that you have to make the dinner before you can eat it. you did a great job making dinner in 20 minutes and including beans, whole grains and veggies. wow.

Mmmmm those sandwiches look so good, what specific recipe from the Uncheese Cookbook did you use?

The recipe is called "gooey grilled cheez sandwiches," (or something to that effect).

Ever since I saw this post I've been fixated on grilled cheese sandwiches. This weekend I'm going to get out my Uncheese Cookbook and make some. I want them on a day when I don't have to go to work - they'll feel more like a treat. In the summer I like to make these with slices of fresh tomato inside.

Just recently discovered your blog and have sent a link to my son, who has just become a vegan dad! (the dad part is new) The recipes look great.
