English Muffin Pizzas

Maybe you've come home from work late. Maybe the kids are hungry and whiny. Maybe you need a quick meal that is kid-friendly, but maybe you can't stomach the idea of hot dogs. Well, then, maybe you should make these mini pizzas.


The ingredients are up to you. These ones have an english muffin crust topped with tomato sauce, Yves pepperoni, orange pepper, mushroom, onion, vegan mozzarella, and oregano. The trick here is to finely slice and dice your ingredients so everything cooks quickly. Cook in a 400 degree oven until cheese melts.

I usually make "lazy" pizza using tortillas, but this would be a nice change.. and hey, what about breakfast pizza!

Since you're also in Canada I can ask, what brand of vegan mozzarella do you use? The only ones I seem to find are ones with casein.

Yay! You are like me - toppings under the cheese! There is great debate here about whether toppings should be on top or below! ;)

I also make these with pita as the crusts. yummy!

I rarely buy vegan cheese, but when I do I get the Tofutti Mozzarella slices at Sobey's. They are reasonably priced, and are trans fat free (according to the package). The kids like them, and they are good in a pinch. I have seen Vegan Gourmet, but it is about 6 bucks.

We had something similar to this last week. No cheese, though. I like black olives & mushrooms, my husband likes Morningstar Farms sausage crumbles with black olives & mushrooms, and our 8 year old son likes crumbles and pineapple! Always a pleasure reading your blog!
