Hot Dog Casserole

If you don't have kids, or are over the age of 7, you may want to just ignore this post. I was in meetings pretty much all day, and Vegan Mom had a meeting at 6:00 this evening, which left little time for making dinner. No real recipe tonight, just an idea that you can modify however you want. Or, not even make at all. But seriously, the kids loved it.


INGREDIENTS
- cooked macaroni
- 1 onion, diced
- frozen mixed vegetables
- white sauce, or cheese sauce
- sliced hot dogs
- bread crumb topping
METHOD
1. Saute onion, add veggies, sauce, and hot dogs. Add to macaroni and mix well. Put in a casserole dish, top with bread crumbs, and bake at 350 until bubbling and top is browned.

I may not have a 7 year old, but I do have a husband in grad school so still appreciate an easy comfort food recipe! We have another hot dog casserole recipe that we make on "lazy nights". Not as healthy but probably just as tasty and SUPER easy! We call it cowboy casserole - just baked beans and hot dogs topped with tater tots - bake at 425 until tots are golden and delicious. If you are feeling frisky you can even add some cheese between the tots and beans.

Well even though this may not impress the more refined vegan pallet, I (a recent college graduate, with no job and a limited budget) think it sounds quite tasty. Funny how we revert back to our childish tastes :)

I think this post is as good and important as the other ones. It's sometimes difficult to feed kids with good healthy food, and you are very good at it! Sometimes you need it fast and easy, but that happens to everyone!
