Albondigas

Tempeh meatballs in a spicy and sweet tomato sauce, served with homemade tortillas to mop up the extra sauce. Need I say more? All three boys bolted these down like it was their last meal. Son #2 ate six meatballs and two tortillas, so the recipe definitely gets the thumbs up!


INGREDIENTS
- 1 recipe of perfect tempeh burger, shaped into meatballs (with 1/2 tsp each cumin and cinnamon added to the spice mix)
- 2 small sweet potatoes, peeled and cut into small chunks
- 2 tbsp oil
- 2 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 1 28oz can diced tomatoes, with juices
- 1 small onion, chopped
- 4 cloves garlic, chopped
- 1 - 2 tbsp chili powder
- 1 tbsp paprika
- 1 tsp coriander
- 1 tsp parsley
- 2 tbsp chopped cilantro
- juice of 1/2 lime
- salt and pepper to taste

METHOD
1. Heat oil in a large deep sided frying pan over medium heat. Cook meatballs for 10 mins, turning regularly, until all sides are nicely browned. Remove from pan.
2. Add potatoes to pan and fry for 5-7 mins, until softened and slightly browned. Remove from pan.
3. While potatoes are cooking, put the remaining ingredients (sugar to salt and pepper) into a food processor and blend until smooth. Add to pan and bring to bubbling. Cook for a few mins, then add meatballs and potatoes into the sauce. Cover and simmer while you make tortillas (15-20 mins). If sauce is too thin for your liking, simmer with the lid off for 5-10 mins. Serve with tortillas.

I have never liked temepeh (it's a texture thing for me), but these meatballs look off the hook good, I'm going to have to give tempeh another try!!!

I would say overall it works pretty well. I recieved it for a birthday gift so really I can't complain. Overall it does really well and produces a good quality of ice cream. I've had the most success with higher fat ice creams non fat sorbets and less success with lower fat ice creams. As might be expected they tend to come out a little icy, which I am sure would happen with most of the makers in this price range. I love it for the size and convenience. I don't have a lot of space so the fact I can keep the bowl permenantly in my freezer is perfect. The one thing I will say is that the bowl has a tendency to warm up quickly so I tend to cool my custard for longer than is recommended and to only use it when my condo is a low temperature. My only troubles came on a warm summer day when my ice cream refused to set up.

These look amazing. I am going to have to give this a try. I agree the combination of spices with the sweet potatoes sounds divine, and I am always looking for more ways to incorporate tempeh in my diet. Vegan Dad, I have a question unrelated to this exact post (sorry), when do use your quick seitan cutlets as opposed to Bryanna's recipe? Or do you use them for "chickeny" recipes all the time now? I am getting ready to make them, and I didn't know if they work out better for certain things, or if they are pretty much a go to recipe that works in anything. I love the fact that they seem so easy to make, and don't take all day. Thanks!!

I have to admit that I have not made Bryanna's recipe in a long time--probably since my introduction to the wonders of homemade vegan sausage. I have been making the quick cutlets as as chicken sausages, then dicing them up for recipes. Since I rarely do anything that actually requires an actual cutlet, it did not make sense to make them that way. I don't think I would make the quick cutlet for things like the Chickenless Kiev; I would take the time to make Bryanna's recipe. I have also yet to try the so-called Baked Seitan O'Greatness that is posted somewhere on the PPK forum.

this blog is awesome and these look delicious! i can't wait to get home (now at boarding school) and try these recipes! in your experience, what are the chances that a place like food emporium, pathmark, or d'agostino's will carry tempeh (at a reasonable price hah)?

Wow. People still go to boarding school? It sounds so Victorian.

I must say that I have never heard of any of the store you listed, so I have no idea whether they carry tempeh. Perhaps another reader here knows? Anyone?

I didnt have all of the ingredients for the "meatballs" but we did make the tortillas last night and they were a huge hit! Thanks for the amazing recipes!

We just made these meatballs for a vegan potluck and they were a HUGE hit. They were the first thing to go, even though there were over 50 other potluck items to choose from. Great recipe! Thanks Vegan Dad!!
