Strawberry Peach Mini Strudels

Tonight's meal was actually leftovers from a great veggie Chinese place on Sansom Street. So I thought I would share these strudels I made before I left for my trip. I went a little crazy with my new pasta roller and made my own phyllo from this recipe, but you most certainly can use the store bought variety. The filling was made with fresh local berries that made it all the more tasty.


INGREDIENTS
Makes 4 strudels
- 6 x 8" squares phyllo dough, 4 layers thick (you might want to use 5 if using store bought)
- melted margarine (about 1/4 cup)
- cinnamon and sugar
- 2 cups sliced strawberries
- 1 peach, chopped
- 1/4 cup sugar
- 1/2 tsp lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp flour
- icing sugar

METHOD
Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
1. Mix together sliced berries, peach, sugar, lemon juice, spices and flour in bowl. Set aside.
2. Brush a sheet of phyllo with margarine and sprinkle with cinnamon and sugar. Lay another sheet on top and brush with margarine. Top with another sheet, brush with margarine and sprinkle with cinnamon and sugar. Top with another sheet of phyllo.
3. Place 1/4 of the filling just off center, along the 8" side, leaving some space on either end. Roll up, not too tightly, placing seam side down. Fold up ends and pinch to close. Repeat with remaining filling and dough.
4. Brush each strudel with margarine and cut 3 slits in each. Bake for 30 to 35 mins, or until golden brown.
5. Let cool on a wire rack, then dust with icing sugar.

Jain and tofufreak,
If you have a pasta roller, home made phyllo is not that hard because the roller does all the work (hand rolling, on the other hand, would be a different story). You can have all the sheets you need for this recipe done in 15 mins. The dough needs to sit in the fridge overnight before rolling, so some forethought is needed.

Wow! Homemade phyllo dough, too. I was wondering also where you found the time to make these homemade goodies. I thought working and caring for a family was more than a full-time job and still you find the time to make things from scratch.
BTW, hope your research trip is going well.

As a professor I have pretty flexible office time. I can work when from home when I am not teaching, can come home early, and all that. So I can start doughs and the like as I work away. The downside is that since I can bring my work home it never seems to end. But we do enjoy tasty meals. And that is good.

If you don't mind, what's the name of the Chinese place? I'm from Philly and always on the lookout for good restaurants. Also, the Basic 4 Vegetarian Snack Bar in the Reading Terminal Market is really good. I recommend their "basic burger" with soy cheese and plenty of cayenne. Mmmmmm.

i just made this recipe, cooking them in lots of two using the homemade phyllo recipe you gave, excepted i subbed wholemeal flour. the first pair used 4 layers of phyllo, but it was too much and didn't taste good, so the next set i only used 3 layers. i still isn't amazing, due to the wholemeal-ness, but definitely better with only 3 layers. anyway, this would be great to make if i didn't make the phyllo myself, but i can't say it was worth it after an afternoon's back-breaking work. oh well.

oh, also, i didn't use icing sugar, i just used the excess strawberry juice with a bit more lemon juice and melted margarine.

and you might want to consider changing the colour of your time stamps and 'post comment' text, it was really hard to see behind the white screen.
