Tangy Bean and Fruit Burritos

I went for a variation of yesterday's fruit theme for tonight's dinner. I love the tangy zing of tomatillos, and combined them with mango and peach. Pinto beans help mellow out the fruit, and the spices round out the flavours. This is a simple recipe and is packed with all sorts of summery goodness.


INGREDIENTS
Makes 4 large burritos
- 1 tsp oil
- 1/2 sweet onion, diced
- 2 cloves garlic, minced
- 6 tomatillos, chopped
- 1/2 tsp cinnamon
- 1 tsp chili powder
- 1/2 tsp oregano
- 1/2 tsp salt
- 1 can pinto beans, rinsed and drained
- 1 mango, peeled and chopped
- 1 peach, skinned and chopped
- water

METHOD
1. Heat oil in a frying pan over medium heat. Cook onions for 5 mins, until soft. Add garlic and tomatillos to the pan with a splash of water. Cook for 7-10 mins, until tomatillos cook down and begin to form a thick sauce. Add spices and mix well.
2. Add beans and mango and cook for 5 mins. Add water, if needed. Add peach and cook for 1 min.
3. Wrap in warmed flour tortillas. Serve with guacamole and sour cream, if desired.

I will warn everyone that the combination of beans and fruit has a very (*ahem*) salutary effect on the bowels. So if you are feeling at all bacjed, this dish alone could solve your problems.

The fruit is a great idea. I've had fruity salsa, but hadn't thought to add fruit as a filling for burritos.

I got purple tomatillos in my CSA share today! I've never seen such a thing before, and they're gorgeous.

Sadly, I only got a couple of them, and they're tiny, so that foils my plan for bright purple salsa.

where do you get your tomatillos here in ontario?
i can't find them in the stores here...i found canned tomatillos in a little mexican grocery once, but that's it.

I can't get tomatillos in Ontario (boo!). I am taking advantage of the fact that I am not in ON right now to buy and eat some. The best I can do is the PC salsa verde.

If you sometimes cross the border to la belle Province, La Costena products are quite easy to find there (they have any Mexican ingredient that can be put in a can, including tomatillos). I guess with a little good will your supermarket could get them.

You don't say when to put the garlic in..do you put it in with the onion? Also, you add the mangos twice in the recipe.

This turned out quite good! The cinnamon is interesting with the fruit - almost a pie sort of thing, with beans. ;)
