Quick and Easy Tofu Etouffee

This started out as a Cajun-esque tofu scramble, but ended up becoming an etouffee as I kept adding things into the pan. You can serve this with rice, or by itself for a brunch.

INGREDIENTS
Serves 4
- 2 tbsp oil
- 1 medium onion, halved and sliced
- 1 celery stalk, finely chopped
- 1 green pepper, small dice
- 1/2 tsp paprika
- 1 tsp thyme
- 1 bay leaf, finely crushed
- pinch of cayenne (or more)
- salt and pepper to taste
- 1 pkg extra firm tofu, diced
- 1 andouille sausage, cut into chunks
- 1/4 cup vegan sour cream
- 1/4 cup soy milk (or more)
- 2 green onions, sliced
-chopped parsley for garnish
METHOD
1. Heat oil in a frying pan over medium heat. Saute onions, celery, and pepper for about 8 mins, until beginning to soften. Add spices and fry for 2 mins.
2. Add tofu and sausage to the pan and fry for 5 mins, until they begin to brown a bit.
3. Mix in sour cream. Thin down with soy milk--you may want to use more than 1/4 cup. Stir in green onions. Season to taste, garnish with parsley, and serve.

Etouffee -- are you sure this shouldn't be etofu-fee? :)

Oh my, that looks delicious. I haven't had an etouffee in a long long time...

I'm a long-time veg, about to cross the line into veganism, but have never gotten "into" the fake meat thing (the stuff at the store is just, well, you know.). Your blog has been an eye-opener for me, and you're making me want to try my own. Those sausages look pretty straightforward, but how do I steam them? I have a veggie steamer, will that work?

Yes, a vegetable steamer will work. Just make sure is does not run out of water. I have a posted labeled "On steaming Seitan" that shows what I use.

This was fantastic.

What size package do you use for this?
My "One pkg. extra firm Tofu" was 16 oz, and in truth, was too much.
There just was not enough sauce to coat it all nicely. (made extra sauce, of course!)

Um, my tofu is 450 grams. So, whatever that is in ounces. The sauce just coats the tofu, but I didn't serve it over rice. Perhaps I should amend the recipe.

Guess my choice of wording could have been better...

Anyway, 450 grams is just about 16 oz.
Maybe it was the fact that it was served on rice, or that I am just a greedy eater, but all in all, the dish was fantastic, in case I forgot to mention that.
