Chocolate Pumpkin Pudding Cake

I really need to expand my dessert repetoire beyond many versions of pudding cake, but this is so easy and tasty that I would be happy to eat it on a very regular basis. This is a modified version of my chocolate chip pudding cake recipe and makes use of pureed fresh pumpkin and pumpkin pie spices. Chocolate and pumpkin really go well together, especially with cinnamon and nutmeg. What a great way to start the weekend!

INGREDIENTS
- 1 cup flour
- 1/4 cup packed brown sugar
- 1/2 cup white sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/2 tsp ground ginger
- 1/2 cup pureed cooked pumpkin
- 2 tbsp soy milk
- 2 tbsp oil
- 1/2 cup vegan chocolate chips
- 1/2 cup white sugar
- 1/2 cup unpacked brown sugar
- 1/4 cup cocoa powder
- 1 1/2 cup boiling water
- 1 tbsp vanilla

METHOD
Preheat oven to 350 degrees. Get a few cups of water boiling in your kettle.
1. Whisk together flour, sugar, baking powder and soda, salt, and spices in a medium bowl. In a separate small bowl, whisk together pumpkin, milk and oil. Add to flour and mix with a spoon. Stir in chocolate chips, then spread into a 8x8 pan.
2. Whisk together white and brown sugar with cocoa powder and sprinkle evenly over batter. Gently pour boiling water over top (do not mix) and then add vanilla.
3. Bake for 40-45 mins, until top is dry and firm. Let cool a bit before serving. Cut into pieces and spoon pudding over top.

Another one to try!! I LOVE pumpkin and chocolate together. We've actually been eating pumpkin chocolate chip muffins all week, along with pumpkin pie oatmeal, and pumpkin pancakes..........it's been a pumpkin kind of week around here!!!

This looks amazing as usual. Speaking of pumpkin, will you be giving some hints as to what you'll be doing for Thanksgiving? This is the first time I'll be making something and I have no idea what to make! And so far your recipes have never led me a stray :)

Must try this recipe; I just woke up and am drooling while looking at the picture.
I tried the lemon pudding cake once and it was sooo good; made it a second time using limes and it was equally good; my husband and I were licking our plates!!!

This looks super yummy and easy! Just a clarification; how do you get the vanilla evenly over the top, or does it matter in the end result?

I've just bought 2 cans of pumpkin after reading your posts (not the easiest thing to come by here in the U.K). I've never tried pumpkin but I look forwards to making this and other pumpkin recipes from your site, it all looks so good!

So I've been pumpkin/chocolate obsessed lately, and pudding cakes happen to be my most favouritest dessert ever. I had half a can of pumpkin in the fridge (opened to make pumpkin chocolate chip muffins on Saturday, then I used a little more in a pumpkin chocolate cake last night - obsessed, I tell you); so, I really had no choice but to try this tonight.

It is wonderful. A wee bit too sweet for our tastes, but we tend to a) like our chocolate bittersweet, and b) overdo it on the portion sizes, which doesn't help. I think I'll cut the sugar down by about a third next time, just to see, but otherwise absolutely perfect. Thank you!

The best thing I made that used 2T of oil. Mine came out looking just like yours. I made this for my family tonight, and they were all reaaaaaaaaaaaaaaally happy! we enjoyed this with some cognac and vanilla ice cream. Thank you so much! :)
