Creamy Corn Soup

If you are a low fat vegan type you probably should stop reading now. As I was putting the cookbook together (almost done!) I noticed how much of my food is related to some childhood memory. This soup is no exception. I always got to choose my birthday dinner as a kid, and I usually asked for tacos and corn soup. The original is made with cream and milk, so I used soy milk and coconut milk. It's pretty rich, but also pretty tasty. We always garnished it with corn chips, but I didn't have any on hand.

Serves 5-6
- 3 tbsp margarine
- 3 cups plain soy milk
- 1 cup soy creamer
- 4 cups corn
- 1 can coconut milk (I like Thai Kitchen--it is less "coconuty" for stuff like this)
- salt and pepper to taste
- corn chips to garnish

1. Melt margarine over medium heat in a large pot. Add soy milk and creamer and bring to bubbling.
2. Add corn and return to bubbling. Simmer for 5 mins, stirring regularly.
3. Add coconut milk and season to taste with salt and pepper. (I like a good amount of pepper to contrast the creaminess). Do not boil.
4. Serve garnished with some corn chips.

This sounds like the perfect meal to have before a long day of shoveling snow or Christmas shopping.
I've been looking for something just like this. Do you think potatoes would be a good addition to this dish?

That would make an excellent base for any vegetable cream soup. It reminds me of a simple soup my Hungarian grandmother used to make with garden-fresh flat green beans (the kind we usually see as "Italian" in stores here). She would not use bacon or broth, just the creamy milk base with some onion and paprika in it.

This soup could easily be adapted for low-carb-eating vegetarian diabetics like me, using the right vegetables. Thanks much!

Can you please explain what is soy creamer because I can't find it from my dictionary and this soup really looks good. Is it same as soy cream what is meant to food (not whipped)? My translator said that creamer is some kind of spoon so I think that it's not what I'm looking for if I wanna do this.

Soy creamer is a soy substitute for dairy cream. If you don't have it, just use more soy milk.

This was delicious! I was a bit skeptical about it. I was kind of expecting it to taste like a big batch of soymilk with corn. :) I was also afraid of the coconut milk, because I've never used it before. I followed the recipe and added a tiny bit of sauteed onions and garlic, onion powder and cayenne pepper. This soup was amazing! I can't believe how "buttery" it was. Thank you VeganDad for another amazing meal! :)

I finally made this soup and I must say that oh boy it was good. I definitely will do that again. Wow, it really was yammy. Thought maybe next time I do just half recipe because I'm single. I have eaten that soup now three days in five different meals. lol. But it really was SO good!
