Summer Rolls

Just a real quick post tonight because I have to prepare for tomorrow's 8:30 am lecture. Basically, I made this recipe, and filled the rice wrappers with tempeh, sliced green onion, chopped cilantro, and steamed carrot sticks and sliced savoy cabbage tossed in soy sauce. Awesome. And, of course, I made the chili dipping sauce.

Mmmm, I had these a couple of nights ago. They're great with (mung) bean sprouts & clear noodles in them too!

My friend who taught me to make something similar makes them with fried tofu and bean sprouts. She serves them with peanut sauce and it is delicious. They are so easy. Glad you posted this recipe.

i made these last night with your tempeh recipe, green onions, romaine, grated carrots and mint. the tempeh was wonderful in them!

I was looking for a way to use up some tempeh and came across this recipe. I wasn't able to get rice paper. Instead I steamed some savoy cabbage leaves and stuffed them with the temepeh, steamed carrot sticks and sauted red pepper strips and bean sprouts. We had your chili dipping sauce with them. SO good and so healthy. A definite make-again recipe. I served these with your Udon Noodles in Peanut Sauce.
