Lemon Parsley Potatoes

I have an abundance of lemons. I keep buying them and never using them. This is a variation on good ol' parsley potatoes, but I think the lemon adds a nice touch.


INGREDIENTS
- 4-5 red potatoes, cut into chunks
- salted water
- 2 tbsp olive oil
- juice of 1 lemon
- sea salt and pepper to taste
- 2-4 tbsp chopped fresh parsley

METHOD
1. Place potatoes in a pot and cover with water. Add some salt and bring to boil. Simmer for about 10 mins, until potatoes have softened.
2. Heat oil in a frying pan over medium heat. Drain potatoes and add to pan. Fry for about 10 mins, until potatoes are cooked and lightly browned.
3. Add lemon juice and stir, until evaporated. Season with salt and pepper and remove from heat. Stir in as much parsley as you see fit. Serve.

Hi Vegan Dad,

We were going to have boiled spuds untiI saw this post come up just before dinner tonight.

When I saw the lemon juice sizzle and steam I didn't expect the lemon flavour to be taken up by the potatoes. How wrong I was!

I used freshly chopped chives as I didn't have any parsley.

The family loved it and complained and I didn't make enough.

Lemon and potatoes is such a perfect combination. I like to toss oven roasted potatoes with baby spinach, lemon juice and olive oil. So good. This recipe looks delicious, I will have to go get some parsley.

I made these last night with Yukon Gold potatoes. Love the lemon, olive oil, parsley flavor. Not sure if it was using Yukon Golds instead of red potatoes, but they kind of fell apart by the time I fried them. Might have been that I boiled them too long. I was a bit distracted while cooking last night.

Lemon and potato is one of my favorite combintations. If you haven't already done this, roast lemon wedges right along with them (after liberally tossing both in olive oil, maybe throw in a few unpeeled garlic cloves). Hea. Ven.

If you have too many lemons did you know you can freeze them?

Cut them up into the size you want, lay them out on a baking sheet and freeze. When they have hardened so they don't stick together put them into a plastic bag.
I take a slice out now and then and put into my glass of water.
