Curried Potato Salad

Perhaps its my partial Irish ancestry but I love potatoes. I also love potato salad, but it can be a bit bland and boring after a few picnics. Curry powder and some peas spice up this version, and you can leave the mayo behind of you like. It tastes great both warm and cold.

INGREDIENTS
- 6-8 small potatoes
- 1/2 small onion, minced
- 1 garlic clove, minced
- 2 tbsp oil (or use some vegan mayo)
- 1 tsp curry powder (or to taste)
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1 cup thawed frozen peas, or cooked fresh peas
- salt and pepper to taste
- 1/4 cup chopped cilantro

METHOD
1. Boil potatoes until tender. Rinse under cold water for a few mins, then cut into chunks. While still warm, toss in the rest of the ingredients. Serve warm or cold.

My husband is Irish through-and-through. He has been a naturalized U.S. citizen for almost 10 years, and ... he still hates potatoes as much as he did when he was a true Irishman. You see, he had to eat potatoes a lot growing up. A LOT. Two or three times a day, every day.

I always thought my Irish half was the part of me that made me love potatoes. But, since meeting my husband, I've realized the truth ... it's the non-Irish part.

This looks great. One tip I've adopted is microwaving potatoes for potato salad until they are nearly done, but still a little firm. Quicker, fewer dishes, and less heat in the kitchen during the summer.

Oh yum, I like the spice combo! I would definitely put in some Vegenaise - I always hated potato salad and mayo until I became vegan, haha!

OMG this is good! I made it exactly (well almost exactly) as you said -- just a bit less chili pepper as I am serving a toddler. And, I sauteed, ever so briefly, the garlic and onion in a bit of olive oil. I also used the Veganaise. I think this is a new favorite recipe!

Yes, it is like samosa filling, now that I think about it.

Yeah, when I went to Ireland they served potatoes with everything. Nothing like lasagna with a side of french fries.

I took a triple batch of this to a mixed (vegan, veg, omni) bbq today and it was extremely well received.

I tweaked it a bit, added a lot more curry powder and some diced roasted red bell peppers. I also omitted the cilantro because I'm not a fan. One pal commented that it needed more crunch, so I may add celery or cashews (or both!) next time.

Hi: next time, try this with chaat masala (the spice mix specific for chaat) for a great aloo chaat (potato chaat). Omit the mayo of course and only use about 1/2 the oil. Garlic optional, but sprinkle some lemon juice. Cilantro a must, maybe a little very finely diced red onion.
