Creamy Chunky Cauliflower Chowder

Say it! Say "chow-dah!" I don't think this is actually a chowder (when does soup become chowder, anyway?), but I wanted to go with an alliterative title. The temperature dipped down to 2 degrees the other night which suddenly put me in the mood for soup. Of course, now it's about 22 degrees, so that mood has passed. If it is still warm where you are, file this recipe away for later. It is creamy and chunky and perfectly satisfying. The boys loved it as well, which is great because they often balk at soups (or any dish where they can't identify the individual components or separate them out). The chowder has a slightly cheesy taste from the nooch and miso that is well-balanced by the leeks and roasted pepper.

INGREDIENTS
- 2 tbsp oil
- 1 tbsp margarine
- 1 sweet onion, halved and sliced
- 4 garlic cloves, chopped
- 3 leeks, white and light green part, thinly sliced
- 1 large cauliflower, cut into florets
- 2 medium red potatoes, skins on, diced
- 4 cups water
- 1 roasted yellow pepper, skinned, seeded, chopped
- 1 recipe cashew cream
- generous tbsp yellow miso
- generous tbsp Dijon mustard
- 1/2 cup nutritional yeast
- salt and pepper to taste

METHOD
1. Heat oil and margarine in a large soup pot over medium heat. Add onion, garlic, and leeks and saute for 12-15 mins, or until reduced down and golden.
2. Add cauliflower and potatoes and water (salt the water if you want). Bring to bubbling, then reduce heat and cover. Simmer for 15-20 mins, until cauliflower and is very tender.
3. Remove half of the veggies with a slotted spoon. Add the roasted yellow pepper to the remainder and blend with an immersion blender until smooth.
4. Add removed veggies back to the pot along with the cashew cream. Add miso, mustard, and nutritional yeast and mix well. Season to taste, heat until just bubbling, and serve.

I have a strange question though. I have ground cashews from the other day leftover, do you think I would be able to use this for the cashew cream or would that not work?
Cause I really wanna try this soon! Keep up the good work!

Mmm, that looks yummy! I was just thinking about needing to find a recipe to use up some of my miso too, perfect. Now all I need to do is go fetch some cauliflower.

I usually balk when I can't distinguish the ingredients too, haha. This soup looks perfect though... love the cashew cream addition.

Chowder is traditionally a soup thickened with flour and usually containing cream or milk.
My vegan corn chowder doesn't have either, but i still call it chowder too!
This sounds so amazing, i've recently fallen in love with cashew cream. It's warm in LA, but i'm going to make this over the weekend anyway.

I'm allergic to tree nuts. Do you have any suggestions for replacing the cashew cream? Maybe just some arrowroot for thickening?

Part of my almost wants it to get colder out just so I can enjoy soup again. It just doesn't feel right to make it when it's still 30degrees outside. Maybe I'll make an exception since this looks gooood.

Aack. 2 degrees is just wrong in September, even if you are in Canada. Cauliflower is king however, will definitely put this on the list for fall soups.

This was absolutely delicious. My 18 year old son licked the bowl -not that I am proud that he does that - but you get my point! And I had it for dinner last night, an after dinner snack, breakfast this morning and we are almost all out of it. Thank you!

Veganista, definitely use those leftover cashews to make the cashew cream, they will work great. They get blended into microscopic bits and an emulsion anyways.

i'm not vegan, but i love learning recipes and techniques from them! i'm especially pleased to have almost everything on hand for this one--going to the market right now for cashews. it feels like fall in Chicago, so soup tonight!

We made a version of this for dinner tonight, cooking the veggies in the crock pot and finishing the soup as directed. I omitted the miso, because we didn't have any. The verdict: DELICIOUS!

I didn't have cashews, so I used sunflower seeds, which means it was a little gritty. Next time I will definitely be picking up some cashews.

Made this chowder today and it's delicious. As usual. My cashews were salted so I didn't need to add any extra, it turned out perfect. I am however dreaming of an immersion blender...I made a godawful mess in the kitchen!

I made this tonight without the peppers and just cooked the cashews with the soup. Delish!! Great for dipping homemade rolls into on a chilly night.
