Oyster Mushroom Scampi

Last week I got an email from a faithful reader wondering what to do with with some veggie-based shrimp she had picked up. At first, I was jealous about the shrimp. I had some once at a Chinese restaurant in Philly and it was great. If memory serves, it is actually a type of mushroom. It was with shrimp on my mind that I sat down to come up with a special meal for Vegan Mom and I (you really have to try and keep a date night when you have four kids!). I settled on Oyster Mushroom Scampi. The dish is lemony and garlicky, and the mushrooms are wonderfully delicate. I made a thin fettucine noodle (rolled out to number 6) but you could use linguine as well.

INGREDIENTS
Serves 2 for a romantic dinner
- 1/2 pound fresh pasta (linguine or thin fettucine)
- 3 cups large oyster mushroom pieces
- 2 tbsp margarine, plus additional tbsp
- 2 tbsp olive oil
- 2 shallots, small dice
- 5 garlic cloves, thinly sliced
- 1/2 cup dry white wine
- juice of 1 lemon
- 1/4 cup chopped parsley

METHOD
1. Prepare pasta. While waiting for the water to boil, rinse the mushrooms and sprinkle with salt and pepper. Set aside.
2. Heat margarine and oil in a frying pan over medium heat. Add shallots and garlic and saute for 5 mins, until soft and translucent. Add mushrooms to the pan and saute for another 5 mins, until soft.
3. Add wine and lemon juice to the pan with the additional tbsp of butter and parsley. Bring to bubbling, and when maragrine has melted, add cooked pasta to the pan. Stir well and cook until most of the liquid is absorbed. Season to taste with salt and pepper and serve immediately.

I live in Philly, and I've had some vegetarian shrimp dishes and such at places around here. My boyfriend said a lot of them use yams as the fake shrimp.

I have no idea how though.

Nelakee is the brand.Some of the photos in the following website from Ottawa are not appealing to me but scroll down the bottom for the shrimp. They do not list the seaweed but it's the first item on the package. They are packaged frozen so they might get to you by mail OK during the winter.

My husband and I had this for dinner tonight. It was absolutely delicious! Even my non-vegan husband loved it. I found that it made four servings instead of two. No worries, this will taste great for lunch tomorrow :).

I find lobster mushrooms to taste exactly like shrimp; maybe that's what the fake shrimp you're thinking of were made from?

We made this last night (including the fresh pasta), but it turned out waaay too lemony. Blasted gigantic Whole Foods lemons! They are just too much lemon sometimes - lemons vary so much in size, its hard to get it right.

Wow! This was SO delicious. I made two separate batches (because my sister doesn't like mushrooms) both using spaghetti. I used juice of 1/2 lemon for each and it was just enough lemon for me. I made mine with a mix of wild mushrooms, hers with spinach and cherry tomatoes, and both were divine!

Wow - I had oyster mushroom scampi at 3 brothers pizza in Rockville Centre NY. (they have a vegan menu) and I made this recipe last night, it tastes EXACTLY like the one at 3 brothers. I have a feeling they got their inspiration from you ;)
It was perfect. I've been craving it ever since I had it there about 5 months ago, and now I can have it at home without the hefty price tag. Thank-you!
