Happy New Year (and muffins!)

Happy New Year! I usually don't make resolutions, but after a meager 4 posts last month I guess I should resolve to do more cooking. Thanks to all who are still sticking around looking in vain for a new post. 2010 looks like it is shaping up to be a busy year, so I will have to focus on quick and easy meals. While I figure out how this year will shape up culinarily, you head into the kitchen and make these Orange Cranberry Nut Muffins from Vegan Brunch. I have made these many times over the past month and can assure you they are awesome with pecans, or walnuts, or even hemp seeds for a protein boost. You can also sub in applesauce for the oil and they are still tender and moist. This is now my favourite of Isa's cookbooks with its beautiful colours and pics, simple layout, and awesome recipes.

Thank you for the recipe. I love muffins with nuts (provided they aren't the crappy ones you find at starbucks!). These look excellent.

Vegan Brunch is also my favorite Isa cookbook! Last night we had meat eating friends over for beer battered tofu and french fries. Everyone loved the meal. Her baked goods rock as well.

glad to hear those muffins are delicious, as i had picked up a copy of vegan brunch a few days ago =] will definitely have to try it. right now i just baked the East Side coffee cake from the book (w/blueberries yum) and i'm waiting for it to cool and its killing me.

I saw the picture and had to make these today. They are amazing, I've eaten 4 so far and will have to make them again. They get the omnivore seal of approval from the rest of my family.

Happy New Year! Muffins are like ugly cupcakes but I love them! They usually taste good and easy to make.

after loving vwav & not caring for vcon (&I don't get much use out of cupcakes or cookies to really have an opinion) I was on the fence about whether or not I should get vegn brunch. I didnt know if it'd be a miss like vcon or if I'd use it much (i mean, just how much time do i have in the morning? none) but i got a free copy and wow -- i cook from it all the time. I really like it and have liked all 10 recipes I've tried from it.

I too love the color and layout so much that I'm practically copying it with my cookbook :)
