Sweet Onion Relish

Sweet Onion Relish from Vegan Dad on Vimeo.


INGREDIENTS
- 9 lbs Vidalia onions
- 1/2 cup salt
- 4 cups apple cider vinegar
- 4.5 cups sugar
- 1-2 tsp tumeric
- 1/2 cup chopped roasted red pepper, or pimento
- 1 tbsp pickling spice
(more or less this recipe)

Your questions answered!:

1. I mainly use the relish on burger/sausage-like foods. It is also great on a variety of sandwiches.

2. The videos are shot with a Kodak Playsport video camera--we actually bought it for my son (it is durable and waterproof) and I use it more than he does. Editing is done with iMovie.

3. The relish will last for at least a year. It will begin to oxidize a bit after that.
