Green Potato Soup

I am a negligent blogger! Christmas is in nine days and I have nothing ready! Nada! I don't even know what the entree will be! Oh, stupid job getting in the way of the holidays! While I scramble around trying to make Christmas happen, here is an awesome soup to keep away the winter chill. The most amazing thing is that the kids ate it without a single whine. Put a pile of greens on their plate and the wailing can be heard for blocks, but put it in a soup and they bolt it down. Go figure.

INGREDIENTS
- 2 tbsp oil
- 3 leeks, white and light green part, sliced
- 2 celery stalks, chopped
- 6 cloves garlic, chopped
- 1 small bunch swiss chard, stalks removed, chopped
- 4 cups water (more if needed)
- 1.5 lbs diced red potatoes
- 1 cup plain soy milk
- 1/4 cup nutritional yeast
- 4 cups baby spinach
- salt to taste
- lots of freshly ground pepper

METHOD
1. Heat oil in a soup pot over medium heat. Saute leeks, celery, and garlic for 10 mins, until soft. Add chard and saute until wilted. Add water a blend with a hand blender until smooth.
2. Add potatoes. The liquid should almost cover the potatoes. Add more water, if needed. Bring to bubbling, cover, and simmer for 20 mins, or until potatoes are cooked.
3. Add soy milk and nutritional yeast and mix well. Season to taste. I made the soup rather peppery. Then add spinach a stir until wilted but still vibrant green. Serve.

I planned to make potato soup this weekend but my recipe was getting a little tired. The addition of greens and nooch will jazz things right up!

Oh my goodness. This looks so good!! We're having a rare stretch of really cold weather here in Texas and I've been keeping an eye out for good soups to make. Thanks for posting! By the way, I love your site!

You make the most wonderful looking food! I really want to try everything on your blog. When I saw this soup I thought it might have some Thai green curry type of flavors like basil in it but it looks like some standard comfort chowder with healthy greens thrown in. Would be yummy with some dumplings or hot rolls. I want some. Thanks! Becky

I'm so impressed that your kids will eat this!! My son has become pickier in his "old age" - he's four. And it's tough to get him to eat what I cook!! It's even harder as he now refused hummus - HUMMUS!! argh

I totally get what you mean about the kids and greens. Mine will munch on kale and spinach but others have been scorned. Just because they are vegan, I've learned, doesn't mean they'll like every vegetable.

This is a beautiful soup! I make a potato kale soup but I've never blended the greens before in it. I must try.

We made this substituting bok choy for celery, kale (chopped small and added with potatoes) for chard, and with the addition of frozen peas and lemon juice at the end. Delicious! Thanks!

My fiance and I made this yesterday; it was fantastic. We used pak choi because we couldn't find swiss chard here (in the Netherlands). We also added a bit extra nutritional yeast because I love the flavor of it.

This meal was perfect for a freezing winter day! Man it was good :)

You are awesome! I made a variation of the soup on New Year's Day and the kids loved it. I wanted to get those good luck greens in there so I made it with collards and kale. I had no leeks on hand so I substituted onions and I only had sweet potatoes so I used those instead of red ones. It was delish! Thank you for the inspiration.
