Cream of Broccoli Soup

This is a nice, simple soup, perfect with the baguettes you see in the background.

INGREDIENTS
- 2 tbsp oil
- 1 large sweet onion, diced
- 1 shallot, diced
- 2 celery stalks, chopped
- 1 garlic clove, chopped
- 2 heads of broccoli, cut into florets
- about 3 cups water
- 2 cups cashew cream (or soy creamer/soy milk/coconut milk)
- salt and pepper to taste

METHOD
1. Heat oil in a large pot over medium heat. Saute onion, shallot, celery, and garlic for 15 mins, until nice and soft and stating to get golden.
2. Add broccoli and enough water to cover about 3/4 of the way up (about 3 cups). You don't want too much water or the final soup will be too thin. Cover and simmer for 15-20 mins, until veggies are soft.
3. Blend broccoli mixture with an immersion blender (or what have you) until very smooth. Add in cashew cream and season to taste. Heat to desired temperature, then serve.

I had something similar to this at Karyn's Cooked in Chicago last week...boy, was it good! I can't wait to try making it myself. Broccoli soup has always been one of my favs. :)

I'm curious. My bloglines update said you wrote a post called My Campaign against Hikool, but when I clicked on it it took me to a page that said that didn't exist. And that post isn't on your blog. Strange eh!

i make one very similar to this, it's a favorite with my son. i use regular soy or almond milk (whatever i have in - he doesn't like the coconut milk) and i add a little bit of curry...not a lot, but it adds a little something. :)

I made this, used almond butter instead of cashew and it turned out so well. Will be posting it in my blog soon - thanks for sharing this recipe. Have been a silent reader of your blog for long, delurking for the first time :)

Made this soup and loved it. Then I put the leftover soup over pasta and it was FANTASTIC.

This soup was great. I love the idea of using cashews instead of soy milk. Soy milk always makes it taste like soy. This soup tasted like broccoli.

Loved this recipe (although added a bit of leftover cauliflower as well). We are not vegan but our lovely daughter-in-law is so can't wait to cook it again for her.
