Tofu and Sweet Potatoes over Cajun Quinoa

When the weather outside is frightful you have to turn to food to warm up. This dish makes use of Cajun flavours to transport you to the Bajou in the middle of the winter weather. You can serve this over rice, but I went with quinoa if only because it's fun to say "Cajun quinoa." To make it I cooked 1 cup of quinoa in 2 cups of water. When done, I added 1/4 cup of chopped fresh parsely and a few dashes of hot sauce.

INGREDIENTS
- 2 tbsp oil
- 1 large sweet onion, diced
- 2 celery stalks, diced
- 1 green pepper, diced
- 2 bay leaves
- 3 cups diced sweet potato
- 1 pkg extra firm tofu, diced
- 1/3 cup of water, plus more as needed
- 2 tsp paprika
- 1 tsp thyme
- 1 tsp seasoned salt
- cayenne pepper to taste
- freshly ground pepper
- 1 can coconut milk

METHOD
1. Heat oil in a large pan over medium heat. Saute onion, celery, green pepper, and bay leaves for 5-7 mins, until onion is soft and translucent. Add potatoes and fry for 2 mins. Add tofu, water, and spices. Cook uncovered for about 10 mins, until potatoes are beginning to soften. Add a few splashes of water to keep everything from sticking.
2. Add coconut milk to the pan and bring to bubbling. Simmer for 10 more mins, until veggies are cooked through. Season to taste and serve.

Oh my. The snow looks absolutely gorgeous. The snow we got two days ago was mixed with rain, so our snow turned to slush before it even hit the ground. I cant wait til we get pretty snow like that!

I made your Spicy White Bean Soup tonight. I was going to make it with a seitan log that I made for Thanksgiving, but it just did not look well anymore. The soup though was delicious. I added cayenne, paprika, basil, tomato paste, and chili powder so that I could still have a zing. So delicious.

Oh my gosh, I can't even imagine that much snow right now! Food looks delicious though, I'm sure it warmed you right up :)

Reading this blog makes me want to come and be aupair, or something, couple months in your family so that I could learn to do all these yammy foods.

Oh and that snow. I miss snow. Because the climate change we don't get it in here so often and when I was a kid every winter were white winter. That is so huge indicatior if you think what has change in these past years.

It is fun to say "Cajun quinoa"! And I'm so jealous of your snow. We'll be lucky if we see one flake all year in Memphis ... it NEVER snows down South, and that makes me sad. I hate cold weather, but snow is so beautiful.

We have about 5 inches of snow on the ground here in Chicagoland. My husband and I got to cross country ski on Tuesday before it got so cold. Our first outing of the season! I always forget what great exercise it is. I hear from muscles I haven't talked to since March, the last time I was on skis.

One the recipe, I just LOVE sweet potatoes in savory, spicy dishes. People are always surprised at the great combo it makes. I also love combining sweet potatoes with corn, tomatoes, and hominy in this great stew recipe I have.

It turned out pretty good, i had to add extra of all the spices, but otherwise, YUMMY!!!!!!

I made this using brown rice instead of Quinoa. It was delightful. I sauteed in veggie broth - no oil and I used low fat coconut milk. I will definitely make it again and I appreciate the recipe! Now for those Hot Wingz that keep me drooling!
