Chocolate Chip Cookie Dough Ice Cream

This is so easy I don't know why I didn't think of it before. Thanks to Isa for the cookie dough recipe.

- 1 recipe vanilla ice cream
- 1/2 recipe chocolate chip cookie dough (I omitted the tapioca, and went a little more generous on the flour. I also used mini chocolate chips).

1. Make the cookie dough. Line a cookie sheet with parchment paper. With floured hands, divide the dough into 6 pieces and roll each into a rope/snake, about 1/2" in diameter. Cut off pieces (about 1/2") and place on the prepared sheet. Cover, and place in the freezer for an hour to harden.
2. Make the ice cream as per the recipe. When the ice cream is almost done in the ice cream maker, start dropping in frozen chunks of cookie dough. You can add all of them (not at the same time, though) or as many as you see fit. Save the leftovers in the freezer for next time.
3. Thoroughly freeze before serving.

Cookies! Yay.

But actually, I wanted to let you know that I'm opening a cafe in the far-flung Far East [the Philippines!], where I'm from originally, and I'm thinking of carrying vegan items. There aren't any vegan places there at all, and even vegetarians have a hard time of it, confined as they are to sad salads, a few garden burgers, and tofu, tofu, tofu.

Not vegan myself... well, my best friend and boyfriend both are, so at this point, I'm maybe 80% vegan, haha, but I sympathize, whole-heartedly.

My intro is now officially much longer than my point, which is just this: I hope you don't mind that I'm looking through some of your recipes for my menu! I'm just looking for easy, accessible food, and this is perfect!

Ooh, I make a similar one except I use my sugar cookie dough instead. Sometimes I add peanut butter flavoring and chocolate chunks though.

What kind of ice cream maker do you use? I'd like to purchase one, but I'm wondering if there is a kind that is best for making vegan ice cream. Thanks!!!!

Do you think the cookie dough calls can be TOO frozen? I just put them in the freezer, but probably won't churn the ice cream for 24-48 hours.

Traci: No. They have too much fat in them to really freeze hard.
