Sometimes I get so caught up in trying to recreate dishes I used to eat before I went vegan that I forget how great simple veggie dishes are. This pizza (thinly sliced eggplant, zucchini, mushrooms, tomatoes, red and green peppers, and red onions) was fresh and tasty and unsullied by fake meat and cheese. A good reminder to get back to basics.

Mmmm that pizza looks fantastic! And I agree. I had a salad and potato dish that reminded me just how wonderful veggies can be all on their own last night.
Yumm...I love home made pizza. I make my own yeast base and top with tomato based pasta sauce, mushies, capsicum (peppers) sun dried tomatoes, olives and a tiny bit of onion. I never would have thought of putting zucchini or eggplant on a pizza but then again, I do adore marinated and/or grilled eggplant. Omni hubby has cheese and meat on his but I think the flavours of the vegies are better without anything else.

I know what you mean about simple veggie dishes. They are the best. I never use fake meat or cheese on my pizzas, why would I want to ruin the delicious flavor of all those veggies???
