Hearty Autumn Muffins

Vegan Mom and I have been looking for new things to serve the boys for breakfast to break the monotonous cycle of boxed breakfast cereal. These muffins are one answer. I used the Ginger-Raisin Bran Muffin recipe from VWAV as a starting point and went from there. They are filling, hearty, and filled with two of the wonderful things autumn gives us: pumpkins and apples. Plus, they have enough bran to get the mail moving in the morning . . . if you know what I mean.


INGREDIENTS
Makes 12 large muffins
- 1/2 cup raisins
- 1 cup apple, small dice
- 1 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup sugar
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1/2 tsp salt
- 3/4 cup wheat bran
- 1/4 cup oat bran
- 1 cup pureed pumpkin
- 2/3 cup soy milk
- 1/3 cup canola oil (or applesauce)
- 1 tsp vanilla extract

METHOD
Preheat oven to 400 degrees
1. Soak raisins in warm water. This will keep them plump and from burning in the oven.
2. Whisk together flour, baking powder and soda, sugar, spices, salt, and bran in a bowl. In a separate bowl, whisk together pumpkin, soy milk, oil, and vanilla until well-blended. Add to dry ingredients and mix until just moist (over mixing makes for tough muffins). Fold in raisins and diced apples.
3. Divide batter into muffin tins and bake for 20-22 mins, until a toothpick comes out clean.

These look wonderful. I'm often in a breakfast rut too. Sometimes, just to break free from boxed cereal I even serve the kids yogurt, fruit and toast, not exciting, but atleast not cereal!!

Now that it's cold, they've been wanting oatmeal, so we've been adding pureed pumpkin and some spices and calling it pumpkin pie oatmeal, they really like that a lot too.

These sound good, I might use nuts instead of raisens as I am not fond of raisens cooked.

Those look delicious. They sound like the perfect way to use up the leftover pumpkin I have on hand from making your pasta today. Even better, I have everything on hand.

I just made these! This is actually the first recipe of yours that I've tried, and they're a hit! I omitted the raisins because I didn't have them on hand, but that wasn't a problem. I've been wanting to make more pumpkin-related things (I made two HUGE loaves of vegan challah for my sweetie's birthday on Friday), and these filled the need. At the same time I made the pumpkin chocolate chip cupcakes from Vegan Cupcakes Take Over the World - each calls for about 1/2 can of pumpkin, so it worked out perfectly! Thanks a lot!

These are cooking in my oven now. I made them for my child's daycare, so they are for 10 toddlers between the age of 12 months and 2 years. I try to make snacks for everyone at his daycare because he can't eat their non-vegan food. Also, I have printed up the recipe and your site to distribute to the parents.
At first I thought the recipe sounded strange. Wheat and oat bran? Let me just say that I was licking the bowl clean. My house smells great. I hope I don't eat them before snack time tomorrow. Thank you!

Part 2. The toddlers and their teachers loved the muffins. They were a big hit. Everyone ate them except my 15 month old. He gave his to the cute blonde 12 month old. Flirting over food I guess. A few parents were glad I printed out the recipe for them. Hopefully they will be going to your site for more idea. Thank you for taking the time to make this blog.

Can I substitute the pumpkin puree for more apple sauce and get rid of the raisons?

Raisins are optional. Not sure about the pumpkin sub, but I don't see why it wouldn't work.

Can you tell me about oat bran? I found wheat bran in the baking goods section at my local whole foods, but oat bran was nowhere to be found. Is it a baking/flour type product, of maybe a cereal? I'm going to make these muffins tomorrow, and for the time being will substitute oatmeal.
