Super Veggie Scrambled Tofu

I have not made scrambled tofu for a while and I'm not sure why. It is easy to make and incredibly tasty. You really can use whatever veggies you have in the crisper to jazz up your tofu, but this combination works very well (and looks so pretty). I know that scrambled tofu has become fairly ubiquitous in vegan bloggerdom, but here is the recipe anyway.

- 2 tbsp oil
- 1 sweet onion, diced
- 2 cloves garlic, diced
- 8 oz sliced mushrooms
- 1/4 cup water (more as needed)
- 1/2 tsp tumeric
- 1 tsp paprika
- 1 tsp salt
- freshly ground pepper
- 1 pkg extra firm tofu, crumbled
- 1 tomato, diced
- 1 bunch asparagus, steamed and cut into 1 inch sections
- 4 cups baby spinach

1. Saute onion and garlic in a saucepan over medium heat for 5 mins. Add mushrooms and saute until they release their water and have reduced in size. Get the asparagus steaming.
2. Add water, spices, tofu and mix well. Cook for 5 mins, adding more water if it gets too dry. Add tomato and cook for 3 mins. Add asparagus and spinach and reduce heat.
3. Cover pan with a lid to let spinach cook. Remove lid and mix everything well.

This combo looks good. I also like to put nutritional yeast in mine - makes it a bit cheezy :)

I also had scrambled tofu yesterday for the first time in ages... I like your idea of using asparagus!

Mmm...scrambled 'fu is like margaritas; it's always fun to try a new variation. Yours looks delicious. I always add mushrooms and baby spinach to mine too.

I've made scrambled tofu many times but have never tried spinach or asparagus in it. I also like a little nutritional yeast in mine. Yummy! My 2 year-old daughter loves it and begs me for "toe-food."

Thanks for the ideas! Love your blog.

I admit to having a slight fear of the scrambled tofu. I like tofu egg salad just fine but I am not so sure about having it warmed like this - I will have to take the plunge at some point, but since I occasionally do have an egg I have a hard time making this leap.

I made scrambled tofu the other day too. Mine is never that pretty, though.

Loved it. I actually had never before attempted scrambled tofu; in the vegan frenzy I experienced after making the transition about a year ago, I've been so wrapped up in seitanic and veganized experimentations that I never turned to something as simple and satisfying as this scramble was.

i've never made this before, and was wondering, does anyone know how leftovers would be? I was thinking that this might work in a breakfast wrap with some seitan sausage, but i'm not sure how the tofu would hold up.

Leftover scrambled tofu is awesome, I think. I just toss mine in the microwave--it makes the 'fu kind of chewy. Just make sure you use firm or extra firm tofu.
