Son #1 wanted to play soccer this summer, so I am now officially Vegan Soccer Dad. Of course, I totally forgot about his first practice and stayed later than usual at the office figuring I had all the time in the world to make dinner when I got home. Upon arriving home I was reminded of the error of my ways and suddenly had to get everyone fed and Son #1 to practice in one hour. I kicked into high chopping gear and made this. The kids adore all Mexican food, but having tortilla chips makes it all the more special (bags of chips are a rare commodity in this house). They think they are having a treat and are getting nutrition at the same time.

Mexican Fast Food
There is no real recipe tonight since topping are really up to you. This plate has:
1. Tortilla chips
2. Tofu (fried in a bit of oil, then seasoned with one of those Old El Paso taco seasonings packs (the shame! I told you I was in a hurry!) and mixed some water to coat the tofu.
3. Chickpeas cooked in some chipotle salsa.
4. Chopped veggies: onion, romaine lettuce, tomato, avocado.
5. Salsa
6. Chili Lime Yogurt: about 1 cup of plain soy yogurt mixed with juice of 1 lime, large pinch of sugar, salt to taste, and 1/4 tsp chili powder.

What a great idea! I've been finding lately that I only have the energy quick and easy meals. I will definitely be giving this a try.
now, that's what i'm talkin' about.
i shall eat this with tempeh someday, because i don't care for tofu.
i love mexican home made fast food :) i have to try that chili lime yogurt: usually i try to prepare kind of sour cream using soy cream + lemon juice and salt and i put it in rolled tortillas with mashed potatoes, rocket and mashed red beans.
A great way to earn a reprieve.

This looks delicious! Some great variations to try. Our household's "Mexican fast food" is to fry up some corn tortillas for tostadas and top with seasoned black beans or kidney beans, sometimes combined with corn, topped with vegan cheddar or jalapeno jack (if we have any), onions, lettuce, chopped tomatoes, chopped avocado (again, if we have any), and Trader Joe's peach salsa. I like the idea of doing seasoned tofu as a variation, and can't wait to try the lime yogurt.
No shame in that! It looks delish :) And believe me....your "takeout" version of Mexican is still a billion times healhier than most peoples average dinner! I always have to remind myself that when I overindulge in one of my vegan meals or treats....it's not like I'm stuffing down dorritos and oreos :)

I only have one and he's on a food binge again, growth spurt!!!
We have something like that maybe once a week. It packs a lot of nutrition and is exotic enough that the children love it. Good dish!
