To celebrate Mother's Day we invited 2 other families over for vegan brunch. While I really wished that Isa's new brunch cookbook had come out already, I was able to put together a great spread. The other families contributed a fruit tray and some vegan cinnamon buns (true friends make vegan baked goods for you when they are not vegan themselves). First, I made English muffins from The Bread Baker's Apprentice. They were awesome, and better than the recipe I posted a while ago.
I also made the pancakes and herb roasted potatoes from Vegan With a Vengeance.
Joining the spread was Vegan Mom's Scrambled Tofu (we also provided tomato and avocado slices for those who wanted to make an English muffin and tofu sandwich thingy (I refuse to call them McMuffins)).
We washed down the food with orange juice and chai tea (I'm not the biggest coffee drinker), and ended the meal with the Apple Walnut Maple Pudding Cake from La Dolce Vegan (a terrible picture of a fantastic dish). I am still full.

Your English Muffins look great - I've been thinking about making some all week. I'm planning on buying Peter Reinhart's whole grain book and now it looks like I need Bread Baker's Apprentice as well!
You're right about that last photo! It looks like the corned beef hash my mom used to bake eggs in. Loved it as a kid, but would not eat it now, obviously! Can't wait to try the apple walnut thingy though, sounds incredible. Take care, awesome blog!

Wow! I wish I'd had all that for brunch yesterday! And you're right about true friends...the best ones make food that you can eat even when they're not vegan. :-)

Your wife is a lucky woman! That looks like a delicious brunch! Especially that maple cake, I love anything with maple in it. In my opinion maple syrups is highly underrated, only a fellow Ontarian can really understand! Lol.

And a perfect opportunity to say I just tried that recipe, for VeganMom's Scrambled Tofu, last week, and have made it two more times since! I LOVE IT!!! I think this will become a weekly food for me.
I replaced half the salt with black salt for extra savory/eggy flavor. Mmmm.
