Maple Dijon Brussels Sprouts

I like Brussels sprouts. There. I said it. I don't know why they get such a bad rap. They are tasty, look funky, and add green to your meal. Even if you don't like them you really should try this tasty recipe.


INGREDIENTS
- 15 Brussels sprouts, trimmed and halved
- 2 tbsp margarine
- 2 tsp Dijon mustard
- 1 tbsp maple syrup

METHOD
1. Steam Brussels sprouts for 5 mins while you heat the margarine over medium-lo heat in a frying pan. Add sprouts, cut side down, and cook for about 5 mins, until browned.
2. Add mustard and syrup and a splash of water if too dry. Serve.

Those look delicious. I cooked Brussels sprouts for the first time a few weeks ago, and am ready to make them again! I can't wait to try this recipe!

I was *just* having a facebook conversation a couple days ago w/ an anti-vegan who made the comment that NO ONE likes brussels sprouts, despite my protests. I told him he just hadn't had them fixed the right way. can't wait to try this! :)

I love BS-I call them mini brains. My kids hated them growing up and still do. Left more for me. I would just barely steam them so they had crunch-lots of crunch. I tad of margarine and some smoky roasted ground garlic. I am sooooo hungry now. But its midnight and no supper yet.

I wanted to say that i like how condensed your posts have become. They still have your personal comments, which I like, but you only give us the interesting parts of your meal. You probably had mashed potatoes and seitan, or something of the sort, but you just gave the recipe for the creative and interesting dish.

I'm so jealous. I don't think Brussels sprouts are in season here -- or maybe they just haven't been stocking them at my grocery lately.

Oh boy, looks like I need to give these lil guys another chance - I had a BAD experience with them, they are SO bitter!! But maple and dijon .... yummy!

i LOVE brussel sprouts! my parents never made them when i was living there because they hate them. tried em last year and mmmm! they think i'm nuts. maple and dijon sounds awesome! i usually just make them with margarine and seasoned salt :)

i grew up with my dad calling these budgie heads (he thought that is what they looked like...needless to say he dislikes them)....So i never really got to eat brussel sprouts...when i get my hands on some i will eagerly give it a try... :)
i also noticed you said you were from northern ontario...that is where i call home too....are you far north?...

I love brussels! I like them best roasted, or plain steamed, but this sounds delicious too!

I've been wanting to give brussels sprouts another try. The last time I ate them was as a child and of course I hated them but yours look and sound really tasty! And I really want to be a brussels sprouts lover! Thanks for the recipe.

My mom has always cooked them in Orange Juice, and I love them! It gives them a really great dimension and tang, and they're never too dry. Yum!

YES!!! I love Brussels Sprouts too! I spend so much time trying to convince my friends that they are actually delicious but they never believe me! MMM...this recipe looks great. I'm definitely going to try it.

... you, a vegan, introduce it to your non-vegan family and, even when you move away, your family still makes it in your absence :)
