Chocolate Chip Cookie Pudding Cake

If chocolate makes you happy, then this dessert will make you very happy indeed. I made this earlier in the week, but I should have made it again today because I was pretty bummed out. Check out this pic of today's weather. Gah! The only thing to say is, "what the deuce?!" Anyway, this is a variation of the lemon pudding cake that relies on chocolate chips to make a smooth and rich pudding that you can spoon over the tender cake.

- 1 cup flour
- 1/4 cup packed brown sugar
- 1/2 cup white sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup soy milk
- 2 tbsp oil
- 1/2 cup vegan chocolate chips

- 1/2 cup white sugar
- 1/2 cup unpacked brown sugar
- 1/4 cup cocoa powder
- 1 1/2 cup boiling water
- 1 tbsp vanilla

Preheat oven to 350 degrees. Get a few cups of water boiling in your kettle.
1. Whisk together flour, sugar, baking powder and soda, and salt in a medium bowl. In a separate small bowl, whisk together milk and oil. Add to flour and mix with a spoon. Stir in chocolate chips, then spread into a 8x8 pan.
2. Whisk together white and brown sugar with cocoa powder and sprinkle evenly over batter. Gently pour boiling water over top (do not mix) and then add vanilla.
3. Bake for 40-45 mins, until top is dry and firm. Let cool a bit before serving. Cut into pieces and spoon pudding over top.

Yes, unfortunately I'm experiencing the same winter weather conditions as you are :0( But hey, that cake would make ANYONE feel better about the weather, for sure!!! How divine!!

Wow, easiest dessert ever. I feel unsure about pouring boiling water over it, but trust you enough to just do it.

Looks delicious! I love chocolate..mmmmmm. And if I looked out my window and saw snow, I'd be ecstatic! (It doesn't snow here :( and I love love love the cold).

This looks incredible, I have every thing required for making it, and I think I'll give it a go tonight!! It's cold and rainy here today (after over a week of near 80's), and the perfect thing to cheer us all up!!

Oooo, I love these kind of desserts. In New Zealand we call them self-saucing puddings. I always seem to be making my chocolate self-saucing pudding lately. It's such delicious comfort food (and my boyfriend is always requesting it).

Looks delicious! I do a variation of the recipe in the slow cooker; the sauce sinks to the bottom of the cake. And bad news with the weather; it's the opposite in LA -- boiling!

Oooh, I'm making this this weekend when my husband goes out of town!! My love affair with chocolate continues, unabashed. Actually it's just because my husband is allergic to chocolate. But that doesn't mean I don't whisper sweet nothings to my chocolate.

I think the sugar could be reduced, for sure. Just remember that the sugar and water make the pudding, so you don't want to reduce it too much. Let me know how it all works out.

I used to make a version of this all the time as an undergraduate when I lived alone--it was perfect when I needed a chocolate fix! This one sounds superb. . . must try it again!

Oh my goodness Vegan dad!!! I made this tonight and it is so super yummy!!! It's been a few months since I have had pudding cake and I accidently mixed te sugar meant to sprinkle in with the boiling water. I still just gently poured it over the top. I think it was actually easier than previous ones I have made. The pudding was also much thicker than others, but this may be just a random thing. Anyway I think I will premix the topping stuff from now on. Thanks you are a vegan superhero!!
