Cookbook Tester Recipe: Crispy Chickenless Nuggets

I am testing recipes for an upcoming cookbook! The author is The Happy Herbivore, and she is churning out recipes faster than I can make them. These, as the name suggests, are a very crispy nugget--my boys pound them back with plenty of plum sauce. my dad has always told me that the easiest way to judge a musician is by how well he/she plays a recognizable cover. i think that applies to cooking, too. these look beautiful! i already admire your personal recipes, but now we see the touch you add to other peoples recipes, as well. :)

hey, is this a soy-free recipe?

also, vegan dad, what are your suggestions for making vegan cutlets crispier?

Yes, it is soy free since it is mainly made out of gluten. As for the cutlets, you could bread and bake them, or fry in more oil.

Wow this picture is wonderful!

I just saw the recipe on HH's website; however, now I'm a bit puzzled. She cites a cornflake coating, but I've NEVER been able to make crushed cornflakes look that good/crispy. Can you share your secret?

Double coating. Dip the seitan in soymilk mixed with apple cider vinegar, then roll in crumbs. Redip in soymilk, and toss again in crumbs.
