Tofurky Tettrazini

Tonight was another forray into meals kids like to eat. It was a smashing success--Son #1 had four servings! I would have liked it to be a bit creamier so I am upping the amount of sauce in the recipe below. Feel free to adjust to however creamy/wet you want the dish to be.

- 1/3 pkg spaghettini, broken in thirds, cooked
- 1 onion, diced
- 1 garlic clove, minced
- 1/4 cup margarine
- 1/4 cup flour
- 1 tbsp arrowroot powder
- 2 cups water
- 1/4 cup vegan chicken broth powder
- 1 cup soy creamer
- 1 cup plain soy milk
- 3 tbsp parsley
- 2 tbsp thyme
- salt and pepper to taste
- 1 pkg Tofurky lunch meat, diced
- 1 can white kidney beans, drained and rinsed
- 2 cups frozen mixed veggies
- 1 cup bread crumbs
- 1/2 cup ground almonds

1. Cook pasta. Breaking it into thirds makes it easier to get out of the pan later on.
2. Preheat oven to 350 degrees.
3. While pasta is cooking, saute onions and garlic in a large saucepan over medium heat for 5 mins, or until softened and translucent. Add in flour and arrowroot and stir for 1 min to allow flour to heat up.
3. Slowly add in water, stirring constantly so it blends well. Stir in broth powder and mix well. Stir in soy creamer, soy milk, and spices and let bubble gently. When heated through and smooth, add in Tofurky, beans, and veggies.
4. Mix Tofurky mixture with the cooked and drained pasta. Transfer into a large baking dish (at lest 9 x 13) and smooth flat. Top with bread crumbs and ground almonds and bake 20-30 mins, until top is golden.

Dang, that looks really good - I seriously have to try that out. I've been looking for some dishes that are completely different than what I'm used to.

how is it you don't have agar powder or such in your small town but have vegan chicken broth powder??!!

I make my own. I think if I asked for vegan chicken broth powder at the grocery store here they would look at me like I had two heads. Kind of like the way they looked at me when I asked where they kept the soy nog. I have included the link to the recipe I use in the recipe above.

This dish is great. I made the following changes:
1. I cooked the pasta in veggie broth and used the leftover cooking liquid in the sauce
2. Rice milk instead of soy

Me and my husband are new to veganism and your blog is really helping us. Thank you.

Made this for dinner tonight and my fiance was determined to beat your son by eating more than 4 servings but he only got to 3. This was a HUGE hit. I didn't have broth powder so I just made the 2 cups of water with a bouillon cube. Plus I added two packages of tofurkey. Your recipes are always a hit! Thanks.

I am a little late to comment, but I just made this for dinner last night and I had to let you know how WONDERFUL!!!!!! it is. The only things I did differently were use rice milk (I had some I wanted to use up) with the soy creamer instead of soymilk and I used a no-chicken bouillon mix that I get from my local coop (I adjusted the amount to use based on 4 cups of liquid). I had the leftovers for lunch today and am still amazed by how creamy and yummy this is. I served it to omni's and they really enjoyed it. I think this would be the perfect dish to take to a holiday potluck. For some reason it makes me think of a really good turkey and dressing type of taste. I love your blog, it is really helping my transition to veganism be much easier! The dishes I have made have been enjoyed by my whole family, which is saying alot since I am the only vegan. I am hoping to win over my whole family in time.
